Jalapeno -  Capsicum annuum...

Capsicum are a pod type jalapeno. Their growing time is between 70 to 80 days. The Plant stands about 2 1/2 to 3 feet tall. As they mature, they can turn red. They can thrive in a number of different soil types and temperatures, with a decent amount of water.

Compared to other chili's, the jalapeno have a scoville heat unit of 2,500 to 8,000 units. This is depending on cultivation and preparation of the plant.

Handling fresh jalapeƱos may cause skin irritation. Don't touch your eyes because it will burn and lead to redness.
Did you know Jalapeno is named after a town in Mexico...

BUT, .... I can only think of....   Jalapeno Jelly!!!

Hummingbirds

"I love hummers"

"Hummers!" It seems to be the nick name.

Did you know that there are 17 different species or more?

They have a life span that averages about 4 yrs.
There was a record life span, of at least 12 years. Female, broad tail banded, in 1976.
Then she was recaptured in 1987.

   Among a list of predators, animals known to have eaten “hummers” are grackles, roadrunner, large mouth bass, frogs, spiders;

and Yes! Ladies and gentlemen, I have stated before praying mantis.

       This is an albino!
There are white hummers, two types. Leucistic; partial albino meaning just white feathers and Full  albino; all white feathers pink feet, bill and red eyes.
Although I have never ever seen one in my time, it would be to cool to have one “floating” around here in my area.

If you wanted to make food for the hummers, rule of thumb as a standard, one part white cane sugar to four parts water. Store the unused portion of syrup in the fridge for up to two weeks.

What to do with all that produce...

Who is getting more than they need from their garden?
I am!  That's who!  I am blessed enough to get enough!

I really don't  have a lot of family or friends around me to give or even that matter eat enough veggies..
So the next best thing is...

That's right - canning,

(aren't these beautiful?) (not mine though, I wish)

 freezing and dehydrating.

How to freeze your harvest... I found this site and it is simple and to the point.
 www.cdcg.org/factsheet/freezeyourharvest.pdf

  (I love to do this)

Dehydrate bell peppers and tomatoes, herbs etc... etc... Then having them at any point of time is an option and a freedom, really!!

This is something to think about!!
Having "organic" and some through the off seasons.... That is what I want!

How about you???
